The tie with the territory was determined also by decisions made in the past, which have been maintained in the present and consolidated for the future. De Forville immediately decided to invest in Barbaresco, building the winery in the very heart of the village, close to the tower, on a hill that dominates the plain and reflects in the River Tanaro. The winery has been refurbished several times and has been enlarged according to the growth of production and work. In the winery you can feel the spirit of the past and that of the present, thanks to the work done by Paolo and Valter, enhancing the features of the noble and fine Barbaresco. According to their different characteristics, after the pressing the wines are fermented in stainless-steel tanks. The wines destined to short-term consumption continue their maturation in the tanks, while Barbaresco, Nebbiolo and Barbera are aged in wooden casks and barrels.
Tradition and technology combine to keep in the wine the natural characteristics of the grapes, fruit of a unique territory. The winery includes the ageing area, the stock and the store, each area is temperature-controlled.
